Le Champlain, Fairmont Le Château Frontenac’s gastronomic restaurant for nearly forty years, will close temporarily on June 23rd to undertake a renovation project and reinvention which will lead it to new culinary heights.
While maintaining the historical elements of the beautiful dining room, the renovation project, led by the internationally renowned design firm Rockwell Group, will bring a touch of modernity in the decor and ambience of this magnificent space. This project is a key element of the major hotel renovation project which began in 2012 and will end in spring 2014. Also part of this important project is the Bar St-Laurent and veranda which will also be renovated with new exceptional concepts that will be unveiled later this year.
On the kitchen side, Executive Chef Baptiste Peupion and Restaurant Chef Stéphane Modat are already hard at work developing a new gastronomic signature for the restaurant which will present fresh and seasonal products in a culinary journey of unique and surprising flavors, combining techniques of the past and today.

During the renovation project, Le Café de la Terrasse restaurant will remain open to welcome clients for breakfast, lunch and dinner as well as Sunday brunch and Afternoon tea (Thursday to Saturday) in its casual decor and breathtaking views of the Dufferin Terrace.
